What? I can still eat my favorite recipes!!!

One of the most exciting things about using THRIVE products is that whether we're having to rely on our food storage to eat or we're using it as a convenience, I know my family can keep eating some of our favorites recipes. One of our current favorites is the Baked Creamy Taquitos from Our Best Bites. I was so happy to find a way to adapt the recipe to use my THRIVE products and knew I had to pass it along to you to try out.

Deliciously Healthy Taquitos

6 oz. reduced-fat cream cheese 1 Heat oven to 425˚F. Line a baking sheet with foil and lightly coat with cooking spray.

2 Reconstitute onions, spinach, bell peppers, and chicken in hot water for 10 minutes. While waiting for food to rehydrate, cream together first six ingredients and set aside. Add THRIVE Monterey Jack Cheese to reconstituting ingredients; give it a quick stir then strain immediately.Stir cream cheese mixture and chicken mixture together and add salt and pepper to taste. (You can prepare this ahead of time and refrigerate.)


3 Place 2-3 tbs. of chicken mixture on the lower third of a tortilla, keeping it about ½ inch from the edges. Roll up as tight as you can and place taquitos seam side down on the baking sheet, making sure they are not touching each other. Spray the tops lightly with cooking spray and sprinkle some salt.

Bake for 12-18 minutes or until crisp.
¼ c. diced green chilies
1 tbs. fresh lime juice
½ tsp. cumin
1 tsp. chili powder
¼ tsp. garlic powder
¼ c. THRIVE™ Onions FD
2 tbs. THRIVE Mixed Bell Peppers
½ c. THRIVE Spinach FD
1 ¾ c. THRIVE® Chicken FD
1 c. THRIVE® Monterey Jack Cheese FD
Salt and pepper to taste
Small whole wheat tortillas (can use corn tortillas as well, just keep them moist and warm when rolling them up)

October Q-pon: Monterey Jack Cheese

The freeze dried cheese is a great addition to your food storage because it has a 20 year shelf life and it last for 2 years once opened. It is easy to reconstitute and melts deliciously into any dish.

What is TVP?

THRIVE sells a product called TVP, and I am often being asked "what is that?" TVP stands for Textured Vegetable Protein and it is an easy and affordable way to store protein in your food storage. TVP is a soy product that is high in protein and fiber and low in fat. There is no meat in TVP whatsoever.

TVP is easy to rehydrate. Just add TVP to boiling water and simmer for 5-10 minutes. TVP is a great source of protein to take camping because it is lightweight and easy to reconstitute. 1 oz. of TVP is equivalent to about 3 oz. of meat. After it is rehydrated, TVP should be treated like meat and refrigerated.

THRIVE sells a variety of TVP products, including beef, chicken, sausage, bacon, ham and ready to eat meat like sloppy joes and tacos. They all come in #10 cans and pantry cans, and some come in pouches. They are very affordable compared to the price of fresh meat.

My personal favorite is the Taco TVP. If you've ever eaten tacos at a fast food restaurant, there's a good chance you've had TVP. The flavor is great, it's easy to use, and it's affordable. In my everyday cooking, I like to use it as a meat extender and add it to my ground beef when making tacos. It makes my ground beef last longer and it adds a nice flavor to my tacos. It also tastes good serving it on Fritos.
